Tie Guan Yin, commonly known in English as Iron Goddess of Mercy, is one of China’s most famous oolong teas. It originates from Anxi County in Fujian Province and is widely regarded as one of the representative oolong teas of southern Fujian.
 
Tie Guan Yin was developed during the Qing Dynasty, between 1723 and 1735. The name is associated with Guanyin, the Buddhist Bodhisattva of Compassion, while “Tie,” meaning iron, is often linked to the dense, weighty appearance of the traditionally rolled leaves.
 
Tie Guan Yin is a semi-oxidised oolong tea that combines the mellow depth of black tea with the fresh and delicate fragrance often associated with green tea. The leaves undergo withering, tossing, partial oxidation, rolling and drying before being shaped into compact, tightly rolled pellets.
 
When fully infused, the leaves gradually unfurl, revealing their fresh green colour and traditionally described red-edged appearance. This characteristic reflects the partial oxidation created during processing, although its visibility may vary depending on the production style and oxidation level.
 
A well-made Tie Guan Yin is celebrated for its long-lasting fragrance. Traditionally, it is said that the tea’s aroma may remain expressive even after seven infusions. Its elegant orchid-like fragrance, smooth texture and returning sweetness continue to develop beautifully over successive brews.
 
When brewed, Tie Guan Yin produces a clear golden-green liquor with a fresh and uplifting aroma. The flavour is smooth, mellow and gently sweet, with notes of orchid, fresh vegetation and a soft creamy character, followed by a clean and lingering finish.
 
Tie Guan Yin is particularly well suited to traditional Gongfu brewing. A well-seasoned Yixing purple-clay teapot may enhance the tea’s rounded texture and aromatic depth, although porcelain or glazed teaware is also recommended for preserving its fresh floral fragrance.
