Iron Goddess of Mercy (Tie Guan Yin) is produced in Anxi town, Fujian Province, on behalf of the oolong tea of south of Fujian. The tea was successively grown between 1723 and 1735. People describe the fragrance still remaining even after being brewed seven times. Purple-sand pot can show the real taste of the tea. When fully infused, green tea leaves with red rim can be seen. In order to keep fresh and the semi-fermented characteristic, tea must be vacuum-packed and put in the freezer to stop any further damaging. This tea with both the mellow flavor of black tea, and the delicate fragrance of green tea.
